Vegetarian Baked Beans

I thought that I lost this recipe forever. It has become a family favorite, and I could no longer find it on the internet. I’m not sure what happened, but it showed back up for a little while and I copied it. Thank goodness, because now it is gone again. I have changed the recipe a little from the original that I found on instantlydelicious.com, but this is how I like to make it.


Serves 6

·      1 cup dried great northern beans

·      5 cups water, divided (unless using quick soak method below)

·      1 teaspoon olive oil

·      1 medium onion chopped

·      ½ cup ketchup

·      ¼ cup dark brown sugar

·      ¼ cup molasses

·      1 teaspoon salt

·      1 teaspoon smoked paprika​

·      1/2 teaspoon pepper

·      1/2 teaspoon garlic powder

Directions:

​1.. Cover the dried beans with 4 cups of water and soak overnight, then drain and set aside. For the quick-soak method, place rinsed beans in the instant pot with 6 cups of water and cook on manual at high pressure for 20 minutes  (These are small white bean that I can find in Costa Rica. If your beans are larger, you might want to cook them longer.), making sure the valve is in the sealing position. Allow to vent naturally. Drain and set aside.

2. Preheat oven to 350°

​3. Using the saute function, heat the olive oil in the pot and add the onion. Saute for about 3 minutes, until the onion starts to become translucent.

​4. In a small bowl mix together the ketchup, molasses, brown sugar, and seasonings. Pour over the onions. Sauté until it all comes together.

5. Add the beans, mix all ingredients.

​5. Transfer to a greased 3-qt. baking dish. Bake, uncovered, 1 hour or until bubbly.

Baked beans typically last between 3-5 days in the fridge. If you'd like to enjoy your homemade baked beans for longer, you can also freeze cooked baked beans for up to 6 months in an airtight container.
